“3 Cups” Washington State Cougars New Mexico Bowl Edition Pt 2: Three Tasty Goodies for Game Day!

Hello Cougar fans! Everyone’s getting ready for the bowl game tomorrow against Colorado State. As we speak I’m on a flight to Albuquerque, where I saw another Coug fan and gave him a traditional “Go Cougs!”. I’ve never been to New Mexico, but I heard the capital is a fun place to be. It’s supposed to be clear but chilly, so for those of you attending tomorrow’s game, be sure to bundle up and grab your hand warmers before you go. I’m a third generation Cougar, so I’ll be attending the game with my grandparents.

Here are a few recipes for my favorite desserts, a great way to kick off tomorrow’s bowl game with a sweet treat for the man in your life.

1. Favorite Old Fashioned Gingerbread

Ingredients:

1/2 cup white sugar

1/2 cup butter

1 egg

1 cup molasses

2 1/2 cups all purpose flour

1 1/2 teaspoons baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

1 cup hot water

2. Apple Pie by Grandma Ople

Ingredients:

1 recipe pastry for a 9 inch double-crust pie

1/2 cup unsalted butter

3 tablespoons all purpose flour

1/4 cup water

1/2 cup packed brown sugar

8 granny smith apples – peeled, cored, sliced

3. Iced Pumpkin Cookies

Ingredients:

2 1/2 cups all purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup butter, softened

1 1/2 cups white sugar

1 cup canned pumpkin puree

1 egg

1 teaspoon vanilla extract

2 cups confectioners’ sugar

3 tablespoons milk

1 tablespoon melted butter

1 teaspoon vanilla extract
